BLACKBERRY "PIE" YOGURT PARFAIT

A sweet treat to start the day with NO ADDED SUGAR that is sure to keep you satiated for hours! Cooking fruit like berries helps enhance their natural sweetness, and the addition of chia seeds help thicken the berries into more of a jam (thanks to their natural gel quality when mixed with liquid). It's the perfect combination of protein, fat, and fiber to keep your energy levels stable all day.

Serves 1
INGREDIENTS:
Blackberry Jam:
5 oz fresh or frozen blackberries
1/2 lemon, juiced
Pinch sea salt
1 tbsp chia seeds
Yogurt Base:
1/2 cup plain unsweetened coconut milk yogurt
1 scoop unsweetened or vanilla flavored protein powder
1 scoop unflavored collagen peptides
1/2 tsp Maca powder
1 tsp vanilla or maple extract
Toppings (Choose 2-3 depending on your hunger):
1 tbsp nut/seed butter
1 tbsp raw cacao nibs
1 tbsp pecans
1 tbsp coconut flakes
1 tbsp hemp seeds
1 tbsp chia seeds
1 tsp Bee pollen
DIRECTIONS:
In a small saucepan on the stove, add the lemon juice, a pinch of sea salt, and the blackberries. Heat the fruit over medium-high heat until the berries come to a boil.
Once boiling, reduce the heat to low and let the mixture simmer for about 5 minutes, or until berries break down and the liquid reduces by almost half.
Remove the pot from the heat and add in chia seeds. Stir to combine.
Let the jam cool for about 5 minutes before adding it onto the yogurt (we don't want to kill the live active cultures with the heat).
While the jam mixture cools, add the yogurt ingredients to a medium sized bowl. Stir everything together to combine.
Once jam is cooled, top the yogurt with blackberry jam. Add 2-3 toppings of choice. Serve.
A quick note: Feel free to make the jam ahead of time and store in the fridge until ready to use. Also, you can also use the microwave instead of the stovetop to make the jam. Simply add all the jam ingredients into a tall microwave safe mug and microwave for about two minutes. Stir and let cool to thicken.
You can also meal prep a few servings ahead of time in mason jars and store them in the fridge for quick yogurt-parfait jars on the go.
