STRAWBERRY PITAYA SMOOTHIE BOWL

Pitaya, or dragonfruit, is a beautiful tropical fruit with a firm pink or white flesh, and it has a light, citrusy tropical flavor.


This low-sugar smoothie is so creamy and delicious, without added sugars, too much insulin-spiking fruit, and non-nutritive sweeteners like stevia or monk-fruit. Feel free to add any of these to your smoothie if you like a sweeter smoothie, or use flavored sweetened protein/collagen, if desired. For a whole-food based option, you can even add 1/4-1/2 cup frozen strawberries or swap them for the cauliflower rice altogether.


Serves 1


INGREDIENTS:

  • 1 packet unsweetened pink dragonfruit

  • 1/2 cup frozen cauliflower rice (or frozen strawberries)

  • 1 cup unsweetened nut milk

  • 1 scoop protein

  • 1 scoop collagen, optional

  • 1 tbsp chia seeds

  • 1 tbsp coconut butter (or 3 tbsp coconut flakes)

  • 1 tbsp unsweetened nut or seed butter

  • 1 Brazil nut

  • 1/2 tsp strawberry extract, optional

  • 1 tsp camu camu, optional (vitamin c boost)

2-3 Toppings (Optional):

1 tbsp unsweetened cacao nibs

1 tbsp unsweetened coconut flakes

2 sliced strawberries

Sprinkle of bee pollen


DIRECTIONS:

Add ingredients to the blender and purée smooth.

Pour into a bowl of glass and add toppings if desired!
