EASY ROASTED GREEN BEANS

These green beans are so easy and addictive that I can eat them like fries! I love them roasted plain or sometimes with small grape tomatoes, sliced onion, or even baby red potatoes. They are a perfect quick side component to any meal! I've listed some optional add-ins and swaps below to help you make this recipe your own.


Serves 3-4


INGREDIENTS:

  • 1 pound of fresh or frozen green beans

  • 1 tsp garlic powder

  • 1 tbsp avocado or olive oil

  • Salt and pepper, to taste

  • 1 tsp dried rosemary, thyme, or parsley, optional


Optional Herb/Seasoning Swap Ideas:

  • 1-2 tsp of Italian Seasoning blend or Herbs de Provence blend

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 tbsp coconut aminos

  • Few dashes of liquid smoke

  • 1 tbsp balsamic vinegar


Optional Veggie Add-ins:

  • 1 pint grape tomatoes

  • 4 small new or baby red potatoes, chopped

  • 1/4 cup chopped green onions or sliced onion


DIRECTIONS:

  1. Preheat oven to 425°F.

  2. Line a large sheet pan with aluminum foil and add mist lightly with oil cooking spray.

  3. Add the green beans (and any additional veggies you may be adding) to the sheet pan and drizzle with 1 tbsp oil. Toss to coat. (If you are using frozen green beans, steam them for about 4 minutes before adding to the sheet tray.)

  4. Add seasoning, salt, and pepper. Make sure the vegetables aren't overlapping to ensure proper roasting and crispness.

  5. Roast on the middle rack of your oven for 25-35 minutes or until edges are crispy and golden brown.

  6. Remove the tray from the oven and serve with protein of your choice.
