CINCY-STYLE BEAN FREE CHILI

This recipe is a hearty chili that isn’t too spicy and still full of warmth and depth in flavor that helps your body FEEL good! Plus I've added “PASTA” as an homage to how my dad, who was born and raised in Ohio, as he always made our chili growing up with noodles!
And in case you are sensitive to beans or for diet reasons are avoiding them, this recipe is completely bean free and low-fodmap (although you can certainly replace the meat with beans or tofu for a vegan swap). Instead, I use plenty of other delicious veggies to fill their place. I definitely recommend giving this recipe a try.
This recipe is easily doubled and trust me, you’ll want to!

Serves 4
INGREDIENTS:
2 cups Kettle & Fire Chipotle Beef Bone Broth (or regular beef broth plus 1-2 tbsp chipotle peppers in adobo sauce depending on your spice tolerance)
12-16 oz ground meat of choice or crumbled tofu
1 13.5 oz can peeled diced tomatoes
1 can/package Hearts of Palm “noodles”, drained and rinsed
1 13.5oz can pure pumpkin or butternut squash purée
1 zucchini, diced
2 celery stalks, chopped
1 green bell pepper, seeded and diced
1/4 cup chopped green onions
1 tbsp olive oil (garlic infused if you have it)
1 tbsp chili powder
1/2 tsp coriander
1/2 tsp salt
1/4 tsp cumin
2 tbsp diced jarred chipotle peppers (optional)
DIRECTIONS:
In a large pot over medium heat, add the olive oil and chopped veggies and sauté for about three minutes.
Add the ground meat or tofu and fully cook.
Add the rest of the chili ingredients except for the “noodles” and stir to combine. (If you want a thinner chili, add a little water to the consistency of your liking.)
Bring the pot to a boil and reduce it to a simmer for 20-30 minutes. Taste and adjust the seasoning if needed.
Meanwhile, drain and rinse the hearts of palm pasta. Add the hearts of palm pasta to the pot and let the noodles cook to absorb the flavor for about 3 minutes.
Serve with a dollop of yogurt, cilantro, avocado, hot sauce, or pumpkin seeds, if desired.
This recipe is excellent leftover and reheated the next day!
